How do I make New York style Chinese take out food at home?

I would like to be able to make my favorite Chinese take out recipes at home, such Chicken or beef w/ broccoli, Chicken chow mein, General tso, sesame chicken etc and all the other favorites. Now I have a wok and the utensils, but I can't seem to find the recipes that would give me the same types of foods that I would get at the Chinese restaurant. Any ideas? How do I make New York style Chinese take out food at home?
This book was recommended highly to me: Ken Hom's Quick and Easy Chinese Cooking. I just got a copy so I don't know if it is as good as I was told but you might want to check it out.

Also, yesterday I came across a youtube demo of General Tso chicken--a real favorite with my husband. It looks easier than I thought and vahchef is a favorite with me, anyway!
