The key ingredients of the sauce would be
oyster sauce
light soy sauce
garlic %26amp; ginger
cooking wine
corn flour
water
a tiny bit of sugar
cooking oil
If you use very good quality beef slices, you do not need to marinate the meat before you stir fry it!
My way of preparing black pepper sauce for beef steak is :
3 tablespoons of oyster sauce
1 teaspoon of freshly grounded black pepper
6 tablespoons of water
2 teaspoons of corn flour
2 cloves of garlic
2 tablespoons of cooking oil
2 tablespoon of cooking wine (or red wine)
1/2 yellow onion (sliced) - optional
1) mix oyster sauce, corn flour and water in a bowl and set aside
2) heat up the cooking oil on a frying pan over medium heat, then add garlic into the pan and stir fry till fragrant. Remove the garlic from the pan.
3) turn heat to high, add cooking wine into the pan then stir in the oyster sauce mixture into the pan and turn heat to medium.
4) When the sauce is thicken, add black pepper then pour the sauce on grilled or pan fried beef steak
(When you use onion in this recipe, you should stir fry the onion till soft before you pour the wine into the pan then follow the step 3 and you would have onion black pepper sauce!)

1 small onion, peeled and finely chopped

4 tsps cornstarch
2 Tbs water
Mix cornstarch and 2 tablespoons water; set aside. Put oil in a heavy saucepan over medium heat. Add onion and stir-fry until it becomes golden. Add garlic and ginger and stir-fry 1 minute. Add water, bouillon powder, soy sauce and sugar; mix well. Simmer 5 minutes, stirring often. Add cornstarch-water mixture, stirring constantly. Cook, stirring constantly, until sauce is thick and translucent. If thicker sauce is desired, make and add additional cornstarch-water mixture. 鈥?8 cubes chicken bouillon
鈥?3 tablespoons cornstarch
鈥?4 teaspoons white sugar

To Make Sauce: Bring water to a boil in a large saucepan; dissolve bouillon cubes in boiling water. Remove 1 cup of this broth and mix with cornstarch in a small bowl, then return mixture to saucepan and let thicken. Stir in sugar, oyster sauce and soy sauce; cover, remove from heat and set aside.

Beef, Mushroom %26amp; Oyster Sauce Stir-Fry
Serves 2
Preparation: 20 mins 鈥?Cooking Time: 10 mins
For the Marinade
* 1.25ml (录 tsp) salt
* 5ml (1 tsp) thick/dark soy sauce
* freshly ground pepper
* 5ml (1 tsp) shaoxing wine or medium-dry sherry
* 5ml (1 tsp) corn flour
* 10ml (2 tsp) sesame oil
Ingredients
* 225g (8 oz) rump steak, cut into thin slivers about 5mm(录 inch) thick
* 60ml (4 tbsp) peanut or corn oil
* 125g (4 oz) shiitake mushrooms, trimmed and cut into strips
* salt
* 2 large garlic cloves, finely chopped
* 4-6 thin slices of fresh ginger
* 3 large spring onions, chopped
* 15ml (1 tbsp) shaoxing wine or medium-dry sherry
* 22.5ml (1陆 tbsp) oyster sauce
1. To marinate, place the beef in a bowl, add the salt, soy sauce, pepper, wine and flour and stir in one direction until well coated. Gradually add 15ml (1 tbsp) water, stirring vigorously until absorbed. Stir in the sesame oil.

Egg noodles, steamed rice or Egg Fried Rice makes a lovely accompaniment.
Notes
* Ribeye, skirt of fillet steak will also work if you can鈥檛 find rump steak.
* If you can鈥檛 get hold of shiitake mushrooms use ordinary mushrooms instead.
