Cover 1 cup of sweet rice with 1 inch of water. Soak the rice for at least 30 minutes, or up to 4 hours. Tips: Be sure to use "sweet rice" for this recipe, also known as "glutinous rice" or "sticky rice". It can be purchased by the bag at your local Asian/Chinese food store.

For this recipe you will also need:

Sweet Rice Cakes- Chocolate and Fruit

Instead of choosing a chocolate bar, why not spread some chocolate spread such as Nutella, which is only 80 calories per 15g, on a rice cake; add nutrition by topping the spread with some sliced fruit such as strawberries, raspberries or banana.

This seems like such a treat, but when using a spread like Nutella which contains skimmed milk, hazelnuts and cocoa, the calorie count is justified by the added nutrition, plus only a thin spreading on the rice cake is required to make it satisfying.

The use of plenty of fruit on top of the rice cake, add essential vitamins and minerals, helping you on the way to your five a day. Think more about the nutritional value instead of just the number of calories.

This recipe is so simple and easy and is completely delicious, sometimes more desirable than any shop bought candy bar.

Peanut Butter- High Calorie but Super Nutritional

Although most peanut butters are high calorie, healthier versions are available that can fit into a low calorie diet, such as organic or light versions, available at health food stores. The main benefit of eating peanut butter is the high protein and vitamin content taken from the peanuts; including Vitamin B3, Vitamin E and minerals such as iron. Peanut butter is considered low gi due to it's nutritional value.

Eating peanut butter on rice cakes instead of on bread will lower the calorie count, allowing the enjoyment of a delicious product with fewer calories. Again a thinner spreading is only required to increase the taste value of the rice cake.

Savoury Toppings- Cheese and Salmon

For dieters who prefer a savoury option, try sliced cheddar cheese for a simple topping. Or cream cheese topped with some slices of pineapple or a slice of smoked salmon.

Avocado goes well with cream cheese as well and if highly nutritious.

Even trying just a little butter will make the rice cakes more interesting and even makes them taste a little like popcorn!

Indulgent Rice Cakes- For Diet鈥檚 Day Off

Dieting can be boring and difficult, so be sure to take a day off from it ever so often, on those days, and why not try this indulgent rice cake recipe? Make Rice cake smores, but topping a rice cake with chocolate, peanut butter (optional) and mini marshmallows and grilling it, or microwaving until the topping has melted! Naughty but very, very nice! This would be a great way to introduce children to rice cakes.
