What recipes would you suggest to help recreate these chinese foods from the local takeaway?

Heya,

So the yahoo article about the egg fried rice recipe reminded me about chinese food =) and now i want to recreate the chinese food that i used to eat at my local take away- the food was really nice, probably not good, but nice........but that was over 4 years ago, since then i eat really healthily, avoid e-numbers, eat organically, eat lots of fruit and vegetables e.t.c so i completely avoid takeaways now a-days.

There are so many recipes out there and rather than looking and researching around the net for ages like i usually do i thought i'd ask on here.

To the point: Ok these recipes doesn't have to be healthy..within reason, since i'm not going to be eating them all the time, recipes consist of food from scratch usually so it shouldn't matter too much.

Here is what i am trying to recreate:

*Chicken toast (have made this in the past) but i want the really crunchy bread..i guess that's all the oil.

*Egg fried rice- no vegetables or onions just rice and egg that has that well oiled feel to it, rather than the dry feel you can get from packets.

- i guess i'm using the healthier oil here with the amount i'm looking to put in lol

*Beef curry- consists of beef- but their beef was chewy but nice and was kind of shaped rather than in chunks, peas, onions, and lots of rich slightly spicy, very flavourful chinese curry sauce....ummm.

Egg fried rice is easy. Just boil long grain rice for say 15 minutes or so, you are best to soak the rice in water and rinse about 3 times, otherwise it all sticks together. When it is cooked, heat a wok or large pan with oil and add a few whisked eggs, until they begin to cook, then add the rice and just quickly stir fry until it is all coated in oil and the egg has distributed amongst the rice. You can add soy sauce to this and mix in to give a proper chinese tast.



Curry - I normally make in a pressure cooker with shin beef or any sort of stewing steak. Add water and whatever other ingredients you want. You can buy curry powder which is what is normally used in Chinese curries so put some of this in, some soy sauce, maybe some allspice, afterwards thicken with cornflour. The meat is really tender if cooked in pressure cooker. If you dont have pressure cooker, you could do the same thing in a pan with steak, cut thinly, floured and fried quickly, then add water, curry etc. Dont cook too long as it will go tough.What recipes would you suggest to help recreate these chinese foods from the local takeaway?
Thanks for comments. Tough beef e.g. stewing steak/beef can be tenderised by giving it a good bashing, marinate for several hours in wine or lemon. I prefer wine, if you dont have a pressure cooker, one of the stewpots you can buy or cook several hours in a pan with wine %26amp; water/stock.

A comment - most Chinese cooks "velvet" their beef by coating and frying it first before putting it in the stir-fry. That's why the home stuff rarely tastes the same.
