I have tried many off the internet and cannot duplicate a chinese restaurants chicken with broccoli sauce.Anyone have a good sauce recipe?What is the sauce recipe for chinese chicken with broccoli (restaraunt style)?
Start your wok with crushed garlic, and several coins of fresh ginger in peanut, olive, or canola oil. When the garlic is well browned, remove the garlic and ginger, leaving only their flavors in the oil. Dredge chicken strips or pieces in corn starch prior to frying, then fry in this oil briefly until golden brown, and remove to drain.
In a side bowl, add two tablespoons of soy sauce to 1 tsp sugar, and 1/4 tsp black or white pepper.
Chop a couple of scallions to finish off the dish.
Broccoli should be precooked for 1-2 minutes in boiling water. Cut broccoli into bite size pieces before blanching. Toss blanched broccoli into hot oil after removing chicken, and stir fry for 4-6 minutes. Add soy sauce sugar mixture and toss. Add in one cup chicken broth, and heat to boiling.
Toss in chicken and stir. When sauce starts to thicken put in one or two capfulls of sesame oil, and scallions. Stir again, and serve.What is the sauce recipe for chinese chicken with broccoli (restaraunt style)?
put a bit of cornstarch to make it thick.... add a bit of soy sauce and sugar... according to your taste....
