Chicken and zucchini stir fry with a sesame oil sauce
You need:
2-3 chicken breasts cut into chunks
2 zucchini's
sesame seed oil (found in any market in the asian section)
garlic
chicken stock (optional)
soy sauce
Prep:
Cut chicken breasts into chunks or slices
peel zuchini and cut into slices or chunks
mix 3 tablespoons of soy sauce and 2 tsp of sesame oil
chop garlic
Cooking:
In a wok or frying pan, add 1 tsp of veggie oil or whatever you have
add chicken into the hot oil, stir fry
then add your garlic, stir fry for 1 min
Add zucchini, stir fry
Then add your mixture
and stir fry until mixed well
Add 1/2 cup to 3/4 cup of stock or water
Cover and cook until zucchini is tender

BEEF SALAD – THAI (YAM NEUA)
Dressing
? cup Cilantro, loosely packed, chopped including stems
2 Tbsp Serrano chilies, chopped
3 cloves Garlic, chopped
2 Tbsp Coconut-palm sugar or golden brown sugar
1 ? Tbsp Fish sauce
? tsp Pepper, white if you have it
? cup Lemon juice, fresh (or lime)
Salad
1 lb Steak, flank, top sirloin, eye of the round, either broiled or grilled and hot
1 stalk Lemongrass, remove outer leaves, slice bottom 3 inches thinly
1 small Red onion, cut in half, thinly sliced
? lb Cucumber, peeled and thinly sliced
1 Tomato, cut in half and thinly wedged
? cup Mint, loosely packed, chopped
Romaine lettuce leaves
1. Combine dressing ingredients in blender, whirl to dissolve sugar
2. Slice beef thinly, transfer to plate with juices and add salad ingredients except for lettuce
3. Add dressing and toss to coat
4. Serve with lettuce leaves using as wrap for the salad
5. You can also serve with cooked rice to add to the wrap
Really good, adjust the chilies to your taste
BEEF %26amp; SCALLION STIR FRY (LIKE PF CHANG’S)
? lb Lean Beef, thinly slice against the grain, 1” pieces
2 bunches Scallions, trimmed and cut in 1” lengths
3-4 cloves Garlic, crushed
Marinade
3 Tbsp Dark Soy Sauce (NOT regular soy sauce)
? tsp Sugar
1 tsp Corn starch
2 tsp Oil
1 tsp Fresh Ginger, slivered
Sauce
2 Tbsp Dark Soy Sauce (NOT regular soy sauce)
2 Tbsp Sake or Vodka (don’t use rum, too sweet)
1 tsp Sugar
1 Tbsp Corn starch dissolved in 1/3 cup cold water
2 tsp Oil
2 tsp Hoisin Sauce
1. Mix marinade
2. Add beef, stir and let sit 30 minutes
3. Mix sauce ingredients in small bowl, set aside
4. Add a small amount of oil to a hot wok
5. Add garlic and stir for a few seconds, add beef
6. Stir fry until beef is cooked (1-3 minutes)
7. Add scallions and sauce
8. Add some water if it gets too thick
9. Heat 1 minute and serve over hot rice or noodles
This is easier than it looks and absolutely delicious. As good as PF Chang’s and much cheaper to make at home.
You can make this with pea pods or broccoli; just steam them before adding to wok.
CHINESE ROASTED CHICKEN
3 lbs Chicken pieces
1/3 cup Dark Soy Sauce (not regular soy sauce)
1 Tbsp Honey
1 tsp Five Spice Powder
2 cloves Garlic, crushed
1 tsp Ginger, fresh, grated
1-3 tsp Sesame Oil, to your taste
1. Poke chicken with a knife
2. Mix all remaining ingredients together
3. Marinate chicken at least 2 hours turning often
4. Bake in single layer on foil lined cookie sheet at 325 degrees for 25 minutes, turn and cook for 25 mins more
5. Serve hot or cold
Excellent with boneless, skinless thighs!!

Crab Ragoon
One package of Wanton Wrappers...
One package of cream cheese (roon temp)
One package of Imitation crab meat (minced finely)
4-6 green onions (minced finely)
warm the cream cheese and add the crab meat and green oinions after they have been minced finley... mix well, allow to sit and the flavors will mingle and mix well, wait until the next day by storing covered in the fridge and they will be delish.
Then add a tsp. to each wonton wrapper, pinch closed and fry.. wait until golden
Teriyaki burgers with Asian seasonings.
Ingredients:
1 1/4 to 1 1/2 pounds lean ground beef
2 slices of bread, crumbled
1/4 cup finely chopped onion
2 eggs, slightly beaten
1 1/2 tablespoons sugar
3 tablespoons soy sauce
1/4 cup water
1 clove garlic, finely minced
1/8 teaspoon ground ginger
Preparation:
Combine ground beef and remaining ingredients in a large bowl; blend well. Shape beef mixture into 6 patties. Broil for 10 to 15 minutes about 5 inches from heat, turning once. Serves 4.
