I'd like to make fried rice that tastes just like the one you get from chinese takeaways (australian ones), i've tried a few recipes but can never get the flavour right... can anyone help?Does anyone have a chinese fried rice recipe?
This is a good one;
1 egg
1 tablespoon water
1 tablespoon butter
1 tablespoon vegetable oil
1 onion, chopped
2 cups cooked white rice, cold
2 tablespoons soy sauce
1 teaspoon ground black pepper
1 cup cooked, chopped chicken meat
In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.
Heat oil in same skillet; add onion and saute until soft. Then add rice [make sure your rice is cold before you stir fry], soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot. Serves 3...

Ingredients
3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)
Directions
1Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
2Allow wok to cool slightly.
3Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
4Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
5Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
6Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
7Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.

Try this basic one. Mind you, I am still experimenting to find the perfect flavour.
RICE
1. BOILED RICE
Per Person
INGREDIENTS
250ml of water
? of a teaspoon of salt
100g (125ml by volume) of rice*
METHOD
Check the cooking time on the packet.
Put the water, salt and rice into a saucepan on a medium heat. Bring to the boil. Stir once to stop it sticking to the bottom. Turn down the heat until it is just boiling (simmering). Put the lid on the pan. Cook until the water is absorbed.
DO NOT STIR!
Take the pan off the heat and let it stand for a couple of minutes. Fluff it up with a fork to separate the grains and serve.
TIPS
The most important thing about cooking boiled rice is to use twice as much water (by volume) as rice.
* Basmati is the best all purpose rice. It cooks quickly, it is more fragrant (its name is Hindi for “fragrant”) than long grain and it also holds together during cooking. Brown rice tastes nicer and has more vitamins than white rice.
2. FRIED RICE
Per Person
INGREDIENTS
1 portion of boiled rice
2 tablespoons of sesame oil
METHOD
Put the oil into a frying pan or wok on a medium heat. Add the rice. Fry for about 5 minutes until the rice grains separate. Stir frequently to stop it sticking.
ADDITIONS %26amp; ALTERNATIVES
Use dark soy sauce instead of the sesame oil. Try different mixes of the two.
Chicken Fried Rice
Using a nonstick skillet, or wok used to make this (I usually have to use my wok, as this produces a lot of food the way I do it)
Take Leftover cold rice, set aside. (can cool cooked rice by: spreading it on a pan %26amp; let sit out 30 minutes. Then place it in the fridge for 4 -8 hours.)
Let skillet/wok heat up over medium heat. Mix some oyster sauce %26amp; soy sauce up (to total 1/4-1/2 Cup, so to make 1/2 total, use 1/4 C oyster %26amp; 1/4 C of soy) add this oyster %26amp; soy mix to skillet/wok %26amp; add 1 1/2 ts oil too.
Add 2 eggs to cook in skillet for 1 minutes or 45 seconds. Remove all %26amp; reserve for later use.
Let wok/skillet preheat to high for a bit.
Add thawed peas %26amp; mushrooms to skillet. Cook a couple of minutes. Add 2 garlic cloves, minced. 30 seconds cook time.
then add cooled rice %26amp; egg/oyster/soy sauce combo, and cooked chicken. Cook a few minutes at Medium-high heat.
Cut up some green onions, add to skillet/wok %26amp; cook one more minute.Does anyone have a chinese fried rice recipe?
Measure Ingredient
1 cup Water
1? cup Minute rice

In a small saucepan, bring 1 cup water to a boil. Stir in rice, remove from heat, cover and let stand 5 minutes. Meanwhile using a 10" skillet, cook 1 slightly beaten egg in 3 T butter. Add 1/3 cup chopped onion to the rice. Saute, stirring over medium heat until mixture is slightly browned. Mix 1/2 cup water with 2-3 T soy sauce and stir into the rice.
I've tried over and over to get a good fried rice and have discovered that the most important think is to use cold rice, it works much much better!
Simple recipes just using egg, spring onions a little bit of veg oil and soy sauce work really nicely!
