Sweet Red Bean Soup

Ingredients:

1/2 cup azuki (adzuki) beans or just ordinary red bean

1 tablespoon glutinous rice

1 large piece dried tangerine peel (about 3 inches)

4 cups water

6 tablespoons brown sugar

1/4 cup peanuts, crushed

Preparation:

1. Soak the beans and rice overnight in an ample amount of water (I use 3 cups).

2. In a 3-quart saucepan, bring 4 cups water with the glutinous rice, azuki beans and dried tangerine peel to boil (Guide Note: glutinous rice, azuki (adzuki) beans, and dried citrus peel or dried tangerine peel can all be purchased in Chinese/Asian markets. If you use fresh citrus peel instead of the dried peel, the orange flavor will be stronger.) .

3. Turn the heat down to low, cover and simmer for about 1 1/4 hours, until the beans are visible with the water just covering them, and tender when pierced with a fork.

4. Add the sugar, stirring to dissolve. (I usually start with 1 /4 cup and add 1 or 2 more tablespoons as desired).

5. Remove the mixture from the heat and cool. Remove the tangerine peel. While the soup is cooling, crush the peanuts.

6. Pour the soup in the blender. Use the liquefy setting to liquefy for 1 - 2 minutes, until the azuki beans are thoroughly blended.

7. Chill until ready to serve. Just before serving, garnish with the crushed peanuts.

Sweet Black Sesame Soup

Ingredients:

1 cup rice (long grain or short grain)

1 cup black sesame seeds

7 cups water

3/4 cup granulated sugar, or to taste

Boiling water as needed, depending on how thick or thin you want the soup

Preparation:

1. Soak the rice in cold water for at least 1 hour.

2. Toast the black sesame seeds in a frying pan on medium low heat for 1 - 2 minutes, until they are fragrant and the pan begins to smoke. Remove and cool.

3. Drain the rice and add to a blender with 3 cups water. Blend until smooth. Remove and clean out the blender.

4. Grind the sesame seeds in the blender until they are fully ground and the sesame smell is very fragrant. Add 1/2 cup water and grind briefly until the mixture forms a grayish paste.

5. Add the blended rice/water mixture to the sesame paste and blend.

6. In a large saucepan, bring the mixture to a boil with 3 1/2 cups water and the sugar. As soon as it starts to boil, turn the heat down to low and cook until the mixture thickens, stirring constantly (5 鈥?8 minutes). Note: Be sure to stir constantly or there will be splattering and the pot may burn. Add boiling water to the soup as desired, depending on how thick or thin you want the soup. Tong sui, also known as tian tang, is a collective term for any sweet, warm soup or custard served as a dessert at the end of a meal in Cantonese cuisine. Tong sui are a Cantonese specialty and are rarely found in other regional cuisines of China. Outside of Cantonese-speaking communities, soupy desserts generally are not recognized as a distinct category, and the term tong sui is not used.

There is a wide variety of tong sui and in Hong Kong, there are often stalls which devote themselves just to selling different types of desserts. These dessert stalls have also gained prominence in overseas Chinese communities, and can be found in various parts of Canada, Australia and the United States.

In Vietnamese cuisine, a similar dessert soup is called ch猫.
