Other than the crab puff, which is probably a bastardized American version of something else, are there any Chinese dishes the use cheese? Are there any Chinese recipes that involve cheese?
Most Chinese are Lactose intolerance (that's why they use soy milk than cow's milk), that is why they don't really have Chinese tradition recipe for it. Recipes with cheese in it are most likely for Westerners. I never heard of crab rangoon till I have eaten it from an American Chinese restaurants.
Chinese recipe that has cheese in it will most likely have to do with desserts which, probably be influence with Western cuisines.

I never heard of chinese eating cheese or cooking like the Mexican that they use a lot of cheese on their food.. correct me if I am wrong...........I would think Topu is their cheese made of soybeans that they uses for a lot of cooking... like soup/fish/ meat/noodles..........
Crab Rangoon is an American invention, not Chinese.
Chinese food doesn't include cheese, oddly.
Mongolian cooking, however, does include cheese. Are there any Chinese recipes that involve cheese?
Some Mongolian dishes and Tibetan dishes use cheese in them.
Cheese is not a staple in the east Asian diet. I'm sure there are newer recipes, but not traditional ones.
I wondered this too. It seems they don't really use cheese, except for the crab rangoons like some people are saying.
