What are some good chinese recipes.....?

I need to get 3 or 4 recipes for my foods class and they need to be chinese (becuase thats the country I chose). So does anyone have and good kinda simple recipes that i can do!?What are some good chinese recipes.....?
Chinese Noodle Soup:



3 ozs. cellophane noodles

1 cup shredded watercress leaves

2 Tbsp. vegetable oil

1/2 cup thinly sliced mushrooms

1 medium onion, sliced

1 cup snow peas

2 thin carrots sliced diagonal

1 tsp. oriental sesame oil

1 tsp. minced fresh ginger

1 tsp. rice vinegar

3 cup chicken stock

2 green onions thinly sliced

1 1/2 cup water

1 Tbsp. soy sauce

1 cup ham cut into julienne



Put cellophane noodles in large bowl. Cover with boiling water. Let stand 5 minutes. Drain thoroughly. Heat oil in wok or deep large skillet over medium high heat. Add onion and carrots and stir fry 3 minutes. Add garlic and ginger stir fry 30 seconds. Add stock, water and soy sauce. Cover and boil 2 minutes. Add ham water cress, mushrooms and noodles. Return to boil. Cover, turn off heat and let steep 2 minutes. Add snow peas, cover and let steep until vegetables are crisp tender about 3 minutes. Stir in sesame oil, rice vinegar and red pepper flakes. Adjust seasoning. Serve in deep bowls, sprinkle with green onions. Makes 3 servings.

Ahhhh, I love cooking chinese. I like making it quite spicey as well. Last nite I had steamed szechuan tilapia over jasmine rice.



The basics for chinese, lets start with a simple dish, "gan bian si ji dou" or spicey string beans.

Chop up some ginger, garlic, green onion. Jalapeno is optional, but I put that in there as well. Hope your foods class has a good exhaust hood system. Get your pan super HOT and add some oil in there. Throw the green beans in there and get them to the gan bian stage where the skin on the bean begins to pucker back. Put the beans off to the side on a plate, add your chopped items and cook them until the garlic and ginger is just about to go brown. Add some chili paste and soy sauce and the green beans back in and flip them about for a few flips to combine and serve. Easy.



Next, take some pork and cut it up into small pieces and marinate it in soy, sesame oil and cornstarch for like at least an hour. Get that pan super hot again with some canola oil in there. I hate the smell of vegetable oil, I never use it. Again, chop up some green onions, ginger and garlic. Throw the chopped stuff into the pan with the cooked pork, add some chili paste, soy and water. You will get a nice sauce and throw it over rice.



Lastly, reduce down some chicken broth/stock, maybe add some cornstarch to it. Throw some baby bok choy in there with dried shrimps and steam it for a few minutes and serve. Easy.



Oh, I wanted to add my spring roll recipe. Get some spring roll wrappers. Cut up some napa cabbage, ginger, garlic, green onions, throw it in a hot pan with some shrimp and just get the shrimp cooked, add some bean sprouts. Season with the aji-mirin vinegar. Put a plate in the bottom of a bowl and dump this stuff on top and let it cool. All the juice will drain below the plate. Get a spring roll wrapper and put a couple leaves of sweet basil in there, and your mixture and roll them up. Serve with sambal olek and possible a peanut dipping sauce. I love these things alot!!!!

You can marinate the pork also in hoison sauce, soy, and oyster sauce for some unique flavors as well, Mix it up. Sometimes I get tired of sesame oil :)

Stir fry... fry veggies (chopped carrots, bok choy, mushrooms, etc.) in a couple tablespoons of oil. Once they're almost cooked, add some chopped chicken, beef, or firm tofu as well as some chinese sauce (hoisin sauce, oyster sauce, etc.). Cook until done!



Crab rangoon... you can buy won-ton wraps in the store. Make a filling of cream cheese, thinly sliced green onion, and canned crab meat. Put a bit of filling in the wraps and seal them shut with water and pinch the edges. Drop into some hot vegetable oil and cook until they float to the surface. Let drain on paper towels and serve immediately.



You can make a simple chinese soup with the veggies and meat from the stir fry and some chicken stock. Add a spoonful of the chinese sauce and it's delish. Another nice addition is some pre-cooked chinese noodles.



Serve with some sticky rice, and you've got a feast fit for a king!
