Good recipe for sweet and sour sauce for eggrolls or other chinese recipes?

Lucky Sweet and Sour Sauce

1 1/2 cups



Ingredients

1/4 cup ketchup

1/4 cup sugar

1/4 cup vinegar

1 tablespoon soy sauce

1 1/2 tablespoons cornstarch

3/4 cup pineapple juice or water (I use pineapple juice)

2 teaspoons oil





Directions

1Mix juice and cornstarch.

2Heat oil in a small saucepan and add remaining ingredients and cornstarch mixture.

4 tablespoons brown sugar

1 tablespoon ketchup

1 teaspoon soy sauce

2 teaspoons cornstarch mixed with 4 teaspoons water



Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot. Mix together the cornstarch and water, add to the other ingredients and stir to thicken.



(If desired, you can add 1 green pepper, cut into chunks, and pineapple chunks as desired after adding the cornstarch.

I tend to cook without recipes, so I'll do my best to get the quantities right... but please taste test %26amp; adjust! This recipe is super un-fussy.



Equal parts tomato ketchup %26amp; balsamic vinegar (or a really acidic red wine - I once used a terrible wine from Tesco that was around $3 and undrinkable, but made a great substitute for balsamic). For every cup of ketchup/balsamic, I would guess approx. 1/2 Tbsp. sugar, but this must be adjusted by your own tastes.



Do this basic mixture, add garlic salt/powder or fresh crushed garlic, cayenne powder if you like spice, and pineapple juice for extra flavour. Pineapple chunks (tinned) are also a great addition esp. if you're using it as a sauce in which to cook meat/veggies.

This is a staple in our house. And the rice vinegar really is the better choice. It has a nice depth of flavor.

(If desired, you can add 1 green pepper, cut into chunks, and pineapple chunks as desired after adding the cornstarch. For a thicker sauce, increase the cornstarch to 4 teaspoons while keeping the water constant.)

1/2 cup water

1/2 cup pineapple juice

1/2 cup sugar

1/2 cup vinegar

1/4 cup tomato paste

Bring to a boil in saucepan for 1 minute, stirring constantly. Cool.

I generally cheat and use La Choy's bottled Sweet and Sour Sauce.
