Stir Fry a million dishes in one

Meats, brown them, use pan dripping/fat as sauce for rest

Any veggies just add them at varied times to get your preferred textures.

garlic, red pepper, soy sauce, ginger , sugar or honey

fish sauces, oyster sauces, hot sauces, etc.. not necessary, but give you more variations in flavor

Corn starch optional, it just gives you gravy rather than clear sauce.

Mix and match the seasonings, vary the amounts then just call it anything. If it tastes garlicky, then it's garlic chicken, or ginger chicken or hunan chicken.

Key success to serving other people Stir-fry is to give it a name. People might quibble with your ratio of spices if it doesn't have a name, but call it Hot-n-Sweet Ginger Chicken and you're a chef.
