Glazed Walnuts



* 2 cups walnut halves

* 戮 cup white sugar

* 录 cup water



Place all the ingredients in a glass bowl. Microwave on high for about 8 minutes or until the syrup has caramelised on the walnuts. Stir occasionally.



Pour the mixture onto a greased baking sheet and separate out the nuts. Allow to cool completely. Store in an airtight container.



* If you prefer you can caramelise in a saucepan over direct heat.
California Poached Persimmons Recipe

6 firm-ripe Fuyu persimmons (about 1 1/2 pounds)

1/2 cup dry white wine

3/4 cup strained fresh orange

1/4 cup sugar

1 teaspoon minced peeled fresh gingerroot

1/4 teaspoon cinnamon



Stem and peel the persimmons, discard any seeds, and cut each persimmon into 8 wedges. In a saucepan combine the persimmons, wine, orange juice, sugar, gingerroot, and cinnamon, bring the liquid to a boil, stirring occasionally, and simmer the mixture, covered, for 15 minutes, or until the persimmons are tender. Transfer the persimmons with a slotted spoon to a bowl, boil the syrup until it is reduced to about 1/2 cup, and pour it over the persimmons. Ingredients:

1 envelope unflavored gelatin, such as Knox

4 tablespoons granulated sugar

1 cup boiling water

2 teaspoons almond extract, as desired*

1 cup evaporated milk

1 cup cold water

1 can (15 ounces) fruit cocktail with syrup*

Preparation:

1. In a medium bowl, combine the gelatin and the sugar, stirring to mix well.

2. Pour the boiling water over the gelatin/sugar mixture, and stir until completely dissolved.

3. Stir in the almond extract, evaporated milk, and the cold water, mixing well.

4. Pour the gelatin into a bowl or serving mold if desired. Chill until firm.

5. To serve, cut the gelatin into 1-inch squares or diamonds and serve with the canned fruit and the syrup from the can. The almond float may be prepared in advance and refrigerated (not frozen) until ready to serve. Serves 4 to 6.



Variations *You can substitute lemon or vanilla extract



*Use canned mandarin oranges or other canned fruit in place of the fruit cocktail.
