What Chinese recipe can I make with almost a can of coconut milk?

At school in International Foods we're currently making Asian foods. I have to make something Chinese with the remaining coconut milk after making fruit sushi (I only used a few tablespoons of a 15oz can). Any ideas? I've tried my internet browser but it's not working out so well.What Chinese recipe can I make with almost a can of coconut milk?
You could try cooking the coconut with condensed milk and mayonnaise. The mix with fried shrimp (minus the batter). I'm not sure what it's called but my mom's made it a few times. It's pretty yummy. :)
No problem. You can also substitute the shrimp with pecans. ;P

Jethro, sushi actually originated in NOrthern CHina, and Coconut milk is used in the south. I think Hainan island, although I associate CHinese and Coconut milk more with SIngapore cooking style.
