1 Whole chicken (free ranch chicken is preferable) 2.5 lb
10 dried red dates (pitted), available in chinese herbs shop
2 big slices of fresh ginger
salt
2.5 litre of water
1) Skinned the chicken, wash it thoroughfully
2) Water bath the chicken in a big pot with boiling water, then wash it under the running tap water for a while to wash away the fat and blood
3) Heat a big pot with water, put all the ingredients into the boiling water, boil for 15 mins then simmer the soup for 2.5 hours
4) Add salt before serve

300g Pork Fascia (sliced in thin strips)
5 button mushrooms (sliced)
1/4 pack of honsimejitake (or 3 dried shitake mushroom)
1/4 pack of enoki mushroom
1/2 Onion (sliced)
2 cloves of garlic (crushed)
1 slice of fresh ginger (chopped)
1 tablespoon oyster sauce
cooking wine
cooking oil
salt
sesame oil (a few drops)
3 tablespoon water
1/2 teaspoon corn starch
1 stalk of green onion (finely chopped)
Marinade:
1 teaspoon Soy Sauce
2 teaspoon Oyster Sauce
1 clove of garlic (crushed)
1/2 teaspoon sea salt
1 teaspoon sugar
1 tablespoon cooking wine
1 teaspoon corn starch
freshly ground white pepper
Preparation:
Put pork into maninade for about 20 minutes, set aside
Mix oyster sauce, water, cornstarch, sesame oil into a bowl, set aside
Slice button mushroom and shitake mushroom. Chop the root of enoki mushroom then soak it in hot water for a few seconds to make it soft. Set aside
1) Heat the Chinese wok or frying pan to real hot, add cooking oil, ginger, to make a fragrance, stir fry the pork quickly to half cook, set aside
2) Clean the wok or pan, heat with some cooking oil, add garlic and onion slice into the wok and stir fry quickly till the onion is soft, add all the mushroom into the wok, stir fry for a few seconds, add cooking wine, stir quickly, then add the pork stir fry quickly in high heat for 2 minutes
3) Pour oyster sauce mixture into the wok and stir fry for 1 minute, turn off the heat, add a few drops of sesame oil to make the food shiney, serve on the plate and sprinkle the green onion on top.

1 free ranch chicken (2.5 lb)
6 to 8 cloves of garlic (with skin) cut into half
Green onion or leek (cut to 2 inches in length)
4 to 5 slices of fresh ginger
lot of ice
1) Clean the chicken, stuff the garlic, leek and ginger into the tummy of the chicken, stitched it up with cooking yarn
2) Heat 2 or 3 litre water in a big pot, put some sea salt in it
3) Put the chicken into the boiled water for water bath, bring to boil, cook for 5 mins (chicken breast facing down into the pot)
4) Drain out the chicken, put it under the running tap water to wash away the fat and blood, wash until it cool down
5) Put the chicken back to the boiling pot again and cook for another 10 mins.
Repeat no. 4 and 5 for 3 more times or until the whole chicken is cooked
6)Put the ice into some distilled water in a big pot, put your cooked chicken into it for ice bath, this process makes the skin crunchy
7) Cut the chicken into pieces and serve with steamed rice
~~~~~~ Dipping sauce A ~~~~~
fresh ginger (make a paste with food processer)
3 tablespoon of peanut oil
some sea salt
1) heat the peanut oil with a sauce pan
2) add ginger paste into the sauce pan, stir in salt (the smell is good...)
~~~~~~~~ Dipping Sauce B ~~~~~~~~~
3 teaspoon of freshly sequeezed lime juice
2 or 3 fresh thai chili
6 cloves of garlic (peel off the skin)
3 slices of fresh ginger
1/2 cup of the chicken soup (the one you use to cook the chicken)
1 teaspoon of salt
Put all the ingredients into a mixer, add a bit sugar if the taste is too sour

200 g Jasmine Rice (soak into water for an hour or 2, drained)
2 cloves of garlic (peel the skin off and chopped)
2 slices of ginger
1 stalk of lemongrass (chopped into half)
1 cup or a bit more of chicken soup (the one you boiled the Hainanese chicken)
1) Heat a non sticking chinese wok with some cooking oil
2) Stir the garlic and ginger into the chinese wok, drain out the garlic and ginger after you smell the fragrance, do not burn the wok
3) Pour the rice + lemongrass into the wok and stir fry for 2 mins. (add a bit of sake - japanese wine if you like) then take the lemongrass out
4) Pour the chicken soup into the chinese wok, the soup should cover up the rice at about 1 inch higher then the rice level. cover the wok to cook till the rice is soft
(If you have a rice-cooker at home, I would suggest you to remove the rice from the chinese wok after frying and cook it with the rice-cooker, 100% safe without burning the rice!)
I like to have Hainanese Chicken Rice and the long boiled Chicken soup for dinner, very comforting!

Shrimp Fried Rice (my fav)
INGREDIENTS:
4 ounces frozen uncooked shrimp, unshelled
Marinade:
1 tablespoon oyster sauce, or to taste
1 tablespoon soy sauce, or to taste
1 teaspoon salt, or to taste
Pepper to taste
1 teaspoon cornstarch mixed with 1 1/2 teaspoons water
Other:
4 ounces cooked ham
1 medium onion
2 green onions
2 eggs (more if desired)
1/2 cup peas
4 cups cold cooked rice
4 to 5 tablespoons oil for stir-frying, or as needed
PREPARATION:
Run the frozen shrimp under warm running water, pat dry with paper towels, shell and devein. Chop into small pieces. Add the marinade ingredients and marinate for 15 minutes.
Dice the ham, onion, and green onion.
Beat the eggs lightly with chopsticks, add a dash of salt, and mix.* Set aside.
Heat the wok and then add 1 tablespoon oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.
Add 2 tablespoons oil, or as needed. When oil is hot, stir-fry the onion and shrimp on high heat for a few moments, remove and set aside. Do the same for the green peas, and then the diced ham.
Add 1 - 2 tablespoons oil, turn the heat down to medium and stir-fry the rice. Add a bit of soy and oyster sauce if desired. Add the other ingredients except the egg and green onion and combine thoroughly. Serve the fried rice with the strips of egg on top and the green onion as garnish.**
*You can also add a bit of oyster sauce if desired
**Alternately, you can mix the green onion and egg in with the other ingredients.
Use salt lightly and msg for flavoring, not too much!

Chinese Roast Pork (one of my personal favorites!):
2Lbs (900g) shoulder pork
3T. Sugar, 1.5 T. soy sauce, 1.5 T. cooking wine, 1.5T. Hoisin sauce, 2t. salt. - mix well
cut pork into strips 1.5" wide. Add sugar mixture and marinate overnight.
Preheat oven to 400F (205C), place marinated meat in a roasting pan and roast on oven's middle rack 40 minutes. Remove and slice. Serve with Garlic, Soy Sauce, Seseme oil, ect.
Chilled Cuccumbers with Vinegar and Garlic:
Ingredients:
1 cucumber - (European type is best with fewer seeds)
Rice vinegar - approximately 1 Tblsp (common white vinegar may be used)
Soy Sauce - approximately 2 Tblsp
Sesame oil - 1 Tspn
Garlic - to taste
Preparation:
All of these ingredients can be used to taste, and quantities should also be determined by the size of the cucumbers used. Break up the cucumber into bite size pieces, then put all the pieces into a bowl. Chop garlic fine, and put the garlic in the bowl with the cucumber. Add soy sauce, sesame oil, and vinegar to bowl. Cover the bowl and shake it up. Eat this dish soon after preparation or it will become soggy.
Stir Fried Bean sprouts:
2/3Lbs bean sprouts
1T. chopped green onion
3T water
1/4 t. salt
wash bean sprouts
heat 1.5 T. oil in Wok. Add all ingredients. Cover and cook until steamy. Stir-fry briefly then remove.
- I usally also add a little bit of rice wine, and soy sauce (use less salt (like a pinch) if you add soy sauce) during the stir-fry portion.
Sweet and Sour Pork
1/2 Lb pork
1 egg yolk, 1/2T soy sauce - mixed together
6T. Cornstarch
oil for deep frying
1/2 t. chopped garlic
Total of 2 c. (cut into peices) onion, tomato (or pineapple or carrot), green pepper
3 T each of sugar, water, vinegar
2 T. Ketchup
1/2 t. salt, 1.5 t cornstarch - mix all of these together
-Cut meat into bite sized peices; tenderize. Mix in yolk/soysauce mix. Drege in cornstarch before deep frying.
-heat oil; deep fry meat 6 minutes or until cooked and surface is crispy. Remove and Drain. Remove oil from wok
-Heat 1 T. oil. Stir fry garlic until fagrant. Add veggies; stir fry briefly. add sugar/water/niegar/ketchup/cor... mixture and bring to a boil. Add fried meat and toss ligtly. remove and serve.
