What is the secret behind those recipes?

Lots of people like to eat Chinese recipes. They have special taste.What is the secret behind those recipes?
there are just a few things that will make Chinese food with an authentic taste



1. ginger %26amp; garlic

2. rice wine

3. soy sauce: both dark soy and light soy

4. oyster sauce, optional

5. a little sugar or a Chinese molasses (bead molasses)

6. and popular these days is toasted sesame oil, used at the end of making the dish, but not for initial stir-fry

7. dry red chillies

8. various ingredients like mung bean sprouts, bamboo shoots, red beans (adzuki - for sweets), snow peas, tofu, and broccoli, scallion / spring onion, coriander leaves ,,,,

* this is a video made by a very nice Chinese man who took the time to make a video of the currently popular Chinese breakfast pancake....he even included the ingredients .....delicious !! I think you could possibly make this with a roomali roti, too....and if you read Chinese, there is a recipe in Chinese online for the pancake part !!

p.s. If you ever find any Chinese gluten of wheat

(see the blue can in a photo in the following article ) I suggest you try some ... it is usually packed in toasted sesame oil, is really healthy and a very good substitute for beef in a beef stir fry.... I make it with scallion, snow peas and bean sprouts or water chestnuts all stir-fried up and served with fresh steamed rice

A combination of cornstarch and egg whites make a batter for many meats. The meat is then fried in very hot oil. As we are all aware you "deep" fry almost anything and it tastes better. After the meat is fried it is removed from the wok and set aside. The rest of the ingredients are added to the wok and the meat is put back in.

Fresh ingredients are used and most everything is cut to proper size to bring out flavor and to make eating with chopsticks easier.

The generous use of a flavor enhancer helps. MSG enhances the flavors of the foods. Many places are getting away from it's use but it is still in many kitchens.
