Chinese Fried Meatballs :

8 oz ground pork

1 egg

1/4 small onion, diced

2 oz fish paste (OR minced shrimp. I use frozen fish paste -- it's what makes them extra yummy!!)

1/4 teaspoon five-spice powder

1/2 tablespoon fish sauce

3 dashes white pepper

Pinch of salt

Oil, for frying

-- Mix all the ingredients (except the oil) in a bowl and blend well. The mixture should be sticky.

-- Heat up a wok with some oil enough to cover half of the meatballs (shallow fry the meatballs).

-- Wet your hands with some water. Using a teaspoon, scoop up some of the meatball mixture and shape it into a small round.

-- Drop the meatball into the wok to fry. Repeat the same until you use up the mixture.

-- Use the spatula to turn the meatballs to fry the other side until they are cooked. Serve hot.

Mongolian Beef :

8 oz beef tenderloin (thinly sliced)

2 tablespoons cooking oil

2 stalks leeks/scallion (sliced diagonally)

1 inch ginger (finely chopped)

3 cloves garlic (thinly sliced)

## Marinade :

1 teaspoon corn starch

1 teaspoon soy sauce

1 tablespoon water

1 teaspoon Chinese cooking wine (rice wine or Shaoxing wine)

## Sauce :

2 teaspoons oyster sauce

2 tablespoons soy sauce

1/2 teaspoon dark soy sauce

3 dashes white pepper powder

1/4 teaspoon sesame oil

1/4 teaspoon Maggi seasoning

1 tablespoon sugar or to taste

Salt to taste

-- Marinate the beef slices with the seasonings for 30 minutes.

-- Heat up a wok with 1 tablespoon of oil and stir-fry the marinated beef until they are half-done.

-- Dish out and set aside.

-- Heat up another 1 tablespoon of oil and saute the garlic and ginger until aromatic.

-- Add the beef back into the wok and then the sauce.

-- Continue to stir-fry until the beef slices are almost done, then add the leeks/scallions into the wok.

-- Do a few quick stirs, add salt to taste, dish out and serve hot.

~~

Sesame Oil Chicken :

3 chicken drumsticks (chop into 3-4 pieces each, bone-in)

2-3 inches knob of ginger (peeled and cut into thin strips)

1 1/2 tablespoon soy sauce

1/2 tablespoon oyster sauce

1 tablespoon Shaoxing wine or Chinese rice wine

2 tablespoons sesame oil

1/2 cup water

3 dashes white pepper powder

-- Heat up a wok over high heat and add the sesame oil.

-- When a swirl of smoke appears from the wok and the oil is fully heated, add the ginger strips and stir fry until light brown or aromatic.

-- Add chicken to the wok and stir fry for about 10-15 seconds before adding the soy sauce, oyster sauce, wine, and white pepper powder.

-- Continue to stir-fry until the chicken is 70% cooked.

-- Add water and do a few quick stirs. Cover the wok with the lid and turn the heat to medium to low heat and let the chicken cook for a few minutes or until the sauce thickens and the meat becomes tender. Dish out and serve immediately.

** If the sauce dries up, add more water and cook until the chicken reaches your desired doneness... ;))

~~

Winter Melon Soup :

8 cups water

8 oz pork ribs, cut into riblets

1 1/2 lbs winter melon, cut into small pieces, skin removed

2 dried scallops

6 dried oysters

1 tablespoon dried shrimp, soaked in water water for 10 minutes

1 dried honey date

1 teaspoon white peppercorn, lightly pounded with a mortar and pestle or the back of a Chinese cleaver

Salt to taste, optional

-- Bring the water to boil in a deep pot.

-- Add the pork ribs and boil for 5 minutes before adding the winter melon, dried seafood, peppers, and honey date.

-- Continue to boil on medium heat for 15-20 minutes before lowering the heat to low. Discard the “foam” at the top of the soup.

-- Keep boiling the soup on low heat for about 45 minutes or so or until the soup is full of the sweet flavor of all the ingredients.

-- Add salt to taste. If you like, you might add some more water and bring the soup to boil before serving.

Well what I made for dinner tonight was really simple. Maybe not the most authentically asian dish ever, but good.

1/2 pound beef, cut into thin strips

2 tbsps vegetable or wok oil

Garlic powder to taste (I used about a tablespoon)

Two cups onion, cut into thin pieces (about match stick)

One green bell pepper, sliced

Salt and black pepper to taste

1-2 tablespoons soy sauce

Heat a wok or saute pan on high heat. Mix together meat, seasonings, soy sauce, and oil in a bowl then pour into the heated pan so the meat sears quickly. Once it's all seared (should only take about two minutes) lower the heat to medium low and throw in the vegetables and cover with a lid. Leave a good majority of the vegetables on top so they steam rather then get soggy on the bottom of the pan. Remove from the heat and eat once the vegetables are cooked.
