I am looking for a recipe for a slaw served at several local Chinese restaurants. Sometimes it is made with daikon and sometimes with cabbage. It always has slivers of carrot and tastes of rice wine vinegar. It is sweet, not sure if sugar is added. It does not have ramen noodles in the dish and it does not appear to have any oil either. I think you are talking about Cantonese style pickled vegetables. Those stuff are very easy to make.
Instructions:
Part one:
1) Boil 2 cups of water, add one cup of vinegar, and add one cup of sugar. Simmer briefly, remove from heat and chill for later use.
Part two:
1) Clean, cut, slice/chop your vegetables. Daikon radish, carrots, Japanese/Persian cucumbers and cabbage are all suitable.
2) Sprinkle one or two teaspoons of salt over vegetables. Rub well, wait 30 minutes and drain all excessive liquid.
In a jar, combine Part 1 and Part 2 and refrigerate. You can add a little fresh red chili pepper if you want. Let the vegetables soak for at least 6 hours before serving. You may adjust the taste by adding more sugar or more vinegar.Chinese Slaw recipes?
Dressing 1/2 cup mayonnaise 3 tablespoons rice vinegar 2 tablespoons soy sauce 1 tablespoon sesame oil 2 teaspoons sugar 1/2 teaspoon Chinese five-spice Salad 5 cups shredded Chinese (napa) cabbage 1 cup daikon, cut into fine julienne 1 small carrot, cut into fine julienne 1 green onion (including top), cut into 1-inch slivers 2 tablespoons chopped cilantro (Chinese parsley)

Daikon and carrots are often pickled and used as a side dish or condiment. They are very good added to pork sandwiches. To pickle, slice daikon and carrots (I like to use a veg peeler to get slivers) and cover with rice wine vinegar, salt and sugar.
