Malaysian sweet and sour fish

Chinese style



Sweet %26amp; Sour Fish



Ingredients:

garoupa fillet, or any firm-fleshed white fish

salt and pepper

cornstarch

oil for frying



plum sauce

tomato ketchup (I usually use Del Monte)

sugar

salt

soy sauce

water



onion, cut into thin wedges

spring onion, sectioned



Method:

1. Pat dry the fish fillet, and cut into slices. Sprinkle a little salt and pepper over, and rub the seasonings onto the fish slices.



2. Heat up enough oil in a wok for deep-frying. Coat the fish slices in cornstarch, shake off the excess, and fry in hot oil till golden-brown. Remove and drain on paper towels.



3. For the sauce, mix together 1 part plum sauce and 3 parts tomato ketchup. Top up with water. The amount of water is equivalent to or slightly more than the plum sauce and ketchup mixture.



4. Grease a hot, clean wok lightly with a little oil, then saute the onion till it becomes a little soft. Add the sauce, and adjust the taste accordingly with some sugar, a pinch of salt, and a few drops of soy sauce.



5. Add the fish slices and toss till each piece is well coated, and the sauce has thickened or reduced. Turn the heat off, stir in the spring onion sections, and serve hot.



*If you prefer the sauce to be more tangy, adjust the taste with a little vinegar.

Sake-Steamed Tai Snapper(Japaneses style)

Serves 2-4



1/2 turnip, about 3 inches in diameter, diced small

1 10 x 5-inch dashi kombu sheet (see Note)

1 3 x 3-inch dashi kombu sheet

4 three-inch fillets Tai snapper or other similar whitefish

Sea salt to taste

2 fresh shiitake mushrooms, cut in half

2 ounces fresh shimeji or other mushrooms, washed well with bottom portion cut off (see Note)

1/2 package soft tofu, drained on paper towels and cut into 6 slices

2/3 cup sake

Store-bought ponzu sauce, for dipping

1/4 daikon radish, grated



Cook turnip in a pot of boiling water until soft, about 5 minutes. Drain, and set aside.



Meanwhile, prepare a steamer. Bring water to a boil, and find a pan or bowl that will fit inside the steamer.
Chinese Steamed fish (really healthy %26amp; delicious!)



Any kind of white fish (fresh)

ginger, cut in thin slivers

garlic, chopped up

a tablespoon of soy sauce

white pepper



Put the fish in a plate and all the ingredients on top of it. Then just steam it covered in a pot of boiling water for about 10 minutes. It's cooked when it's flaky.
