The rice is easy. Just cook your rice in a pot, like you would normally.... use 1 cup of rice for every 3/4 cup of liquid. I like using chicken or vegetable broth instead of water. Bring to a boil, add salt, add rice, cook for 18 minutes on LOW heat, and covered. DO NOT OPEN THE LID. If it's on low heat it won't burn.

Cool the rice. I usually cook 2 cups of uncooked rice. This usually yields 4 cups of cooked rice.

Once the rice is cool, coat a large pan, or wok with Peanut Oil, or other high heat oil.... not olive oil. Then put your rice in. Stir the rice until it's coated in the oil. Add your veggies, which I usually add about a cup or two of frozen peas and carrots, and about a 2-3 Tbsp of low sodium soy sauce, stir to distribute. Add more if you don't think it's enough, but not too much.

Next, push the rice to the sides of the pan, making a doughnut around the pan. Beat in 2 eggs. I usually add about 1 tsp. of Sriracha to the egg for flavor, when I beat the egg. Add the egg to the center of the pan. It will cook and stir it a little bit so it starts to look like scrambled eggs. Once it's fully cooked, lightly stir the mixture so the egg gets distributed throughout.

A couple things you can do. If you want, you can saute a 1/2 cup of diced onion and 2 minced cloves of garlic. Add this to the pan and saute BEFORE you add your rice. Cook for about 8-10 minutes before you add the rice.

If you want to add chicken, ham or beef, cut the meat up into bite size pieces and add these to the pan with the onion and garlic. It won't take long to cook, since it's cut up. Maybe 3-5 minutes, just make sure you turn each piece so it's not raw when you add the rice.

If you wanted to add shrimp, you would do this when you add the peas and carrots.

Also, once this is all cooked, you can top it with chopped fresh cilantro (or parsley), and green onions. I would do about a 1/4 cup of cilantro, but that's cuz I like it.Tasty Chinese Food Recipes?
I LOVE crab rangoon!!

8 oz. cream cheese, softened

6-8 oz. real or imitation crab meat

1 cup chopped green onion

1 pkg. won ton wrappers

Mix together the first three ingredients. Drop by spoon fulls onto wrappers. Fold into triangles. Moisten the edges to "glue" them together. Deep fry in 375 degree oil until golden. About 5 minutes or so on each side.
