Hi: I really liked this one:
Ground pork wrapped in Lettuce
1/2 lb ground pork
2 tsp ginger paste
2 tsp dark soy sauce (the chinese kind, not kikkoman)
3/4 can water chestnuts chopped
1/2 tsp garlic - minced
1 stalk scallion cut into small circles
Sesame oil (chinese or japanese dark sesame oil)
Lettuce leaves - pulled off lettuce head and rinsed
Mung bean noodles (Cellophane noodle)
Oil to fry
Soak mung bean noodles in hot water until soft. Drain well. Heat oil and fry noodles until they are white and puffy - only takes a few seconds, so make sure you have a strainer spoon on hand! Drain well on paper towels.
Heat ground pork in saucepan until cooked through. Drain grease and add ginger paste, soy sauce, water chestnuts, garlic and scallion. Cook on med until heated through. Taste and add more soy if needed. Add a dash of sesame oil and pile onto a lettuce leaf - topping with some of the fried mung bean noodles. Roll leaf around the filling and enjoy!Chinese recipes anyone?
chunk firm tofu and toss in vegetable or corn oil until brown. use a nest of dried noodles per person or fresh egg ones. cook the noodles briefly in stock or miso. add the tofu with chestnut or shitake mushrooms plus shredded chinese cabbage and water chestnuts. cook all together for 2 or 3 minutes - this is not the regular chinese restaurant or takeaway fare. serve with chilli oil and dark soy on the side for pep.
