From what you describe it sounds like one my sister-in law makes around Christmas, although hers has fake crab chunks, shrimp and scallops in it. Give me a couple days and I'll get back to you with her recipe. I know hers uses a brick of Velveeta cheese in it, but it doesn't taste like Velveeta when its finished. It's really good and she serves it in those pastry nests you can buy in the frozen pie crust section at the grocery store
