MyMom's recipe:
Lemon Chicken
Use 1 chicken breast/person
Cut chicken in large bite size pieces. Dip in beaten egg (with a tsp of water/egg added), then dip in bread crumbs. Let stand 10 min. Saut茅 in olive oil on 6 or 7 heat until cooked and golden brown.
Sauce:
Mix 1/4 cup sugar, 1/2 tsp cornstarch, 1/2 cup water. Microwave until boiling, stirring twice. Add a pinch of salt and mace. Add 1 tbsp butter and juice of 1/2 lemon (about 2 tbsp). Stir. Cook 20-25 seconds. stir. Pour sauce over chicken. garnish with lemon slices.Anyone have an EASY kid friendly chinese recipe?
Get a wok and do stir fry. Very easy and very delicious. Search for the recipe, basically just rice and vegetables with soy sauce.mmmmmmmmm. Get some frozen egg rolls too for an easy delicious dinner. Fried rice is very good and easy too, just:
boiled white rice
fried eggs
boiled peas and

Here is my recipe for egg foo young....which you can serve with fried rice. (You can buy a package of fried rice in the rice/prepared food section).
If you have never tried Egg Foo young....you won't regret it. We treat it as the meat of our chinese dinners. Yum!
5 eggs
2 oz. diced cooked meat...( I use leftover beef or chicken).
1 stick of celery, finely shredded
2oz can of bean sprouts
1 small onion, sliced thin
pinch of salt and pepper
Oil for frying
Beat the eggs lightly ,add the meat and celery.
Add bean sprouts and onion, salt and pepper. Stir well.
Heat a wok or frying pan and pour about 4 tBLSP OF OIL.
When hot, spoon about 1/3 cup of egg mixture. Brown one side...then flip and brown the other side.
Gravy:
1 tblsp cornstarch disolved in 3 tblsp cold water
1 cup chicken stock
1 tsp ketchup
1 tblsp soy sauce
pinch salt and pepper
Comine in saucepan and heat over medium heat until thick.
Serve over Egg Foo young and fried rice.
I see you already have a recipe for fried rice..so I won't include mine.
You can also buy egg rolls or pot stickers in the freezer section.
I make hamburger fried rice and serve with egg rolls, this is a sort of North American Asian inspired dish...very kid friendly though...
Hamburger Fried Rice...
1 lb of ground beef browned in stir fry pan
add, 1 half cup each chopped green onion, various coloured peppers and celery
add 4 cups of cooked long grain rice and a dash of soya sauce and done...
This is not Haute Cuisine, by any means, but my kids love it...
you can do a stir fry with fast fry steak or pork chops, chicken or shrimp with purchased frozen stir fry vedge and sauce, serve with rice and boom! done!
convenience foods can be pricy but still, way less pricy than takeout...and take all the chopping and fussing out for you!
stock up on stir fry sauce and frozen veggies and add meat and rice and you have an instant asian inspired meal...
also good, buy some spareribs, boil for 15-20 minutes on the stove and drain, place in a baking pan with some purchased spare rib sauce and cook at 350 for an hour and you have delish spareribs to add to your meal...
dip some chicken breasts in milk or plain yogurt and dredge in dry pancake batter, bake or deep fry in peanut oil...serve with oyster sauce and slivered almonds and you have instant Chicken Almond Soo Guy...
replace the rice in any of these dishes with noodles and the kids will love it!
Egg Foo Young is very simple as well it's just Green onion, celery, bean sprouts and shrimp sauteed in soy sauce and combined with egg.
Egg Foo Young
INGREDIENTS
1 teaspoon sesame oil
1 cup chopped onion
1/4 cup chopped green onion
1/2 cup chopped celery
1 cup bean sprouts
1/4 teaspoon cornstarch
1/2 pound shrimp, peeled, deveined and roughly chopped
2 tablespoons soy sauce
1 teaspoon salt
8 eggs, well beaten
DIRECTIONS
In a skillet over medium heat, heat sesame oil and lightly fry the onions, celery and sprouts. Stir in cornstarch and add shrimp, soy sauce and salt. Stir until well blended. Remove from heat and transfer to a bowl.
Return the pan to the heat, and add the beaten eggs. Fry the eggs while stirring gently. Return the vegetable and shrimp mixture to the pan while the eggs are still liquid. Finish frying until eggs are fully cooked.
You can hone the recipes how you see fit and whatever takes you less time!
